- Organic, Raw, Rare product made in small batches - Known also as Melata or Honeydew Honey
- Very unusual honey, made not from nectar, but from honeydew (droplets of sap that the bees collect from leaves)
- Velvety and thick in texture, and has an earthy, molasses, herbal taste. It is very complex and works beautifully with rich creamy cheeses like a brie, or harder aged cheeses
- Made by artisan beekeeper in Zafferana Etnea along the slopes of the Etna active volcano in Sicily
- Imported from Sicily
This is a very unusual honey, made not from nectar, but from droplets of sap that the bees collect from leaves (those droplets are deposited by aphids). They turn it into honey, but it is not as sweet as regular honey, in fact, it contains a lot of minerals, and some years, it tastes almost salty. It is dark because of the minerals and amino acids it contains, which some people believe to be excellent for the health. This year, the melata came from citrus trees after they were done flowering. It is velvety and thick in texture, and has an earthy, molasses, herbal taste. It is very complex and works beautifully with rich creamy cheeses like a brie, or harder aged cheeses.
