• Eucalyptus honey has the texture of fudge, and a balsamic, herbal taste, sometimes with notes of game or mushroom. It has the faintest notes of eucalyptol on the finish.
• It works well in cocktails (just as chestnut honey and melata do), in place of vermouth for instance. It can be used in hot chocolate, coffee, in baking, to serve with aged cheeses, or as a glaze to grilled fruit in the summer.
